Founded in 1702, Ozawa Shuzo is one of Tokyo’s oldest sake breweries, located in the steep valleys of Ome. The brewery uses pure mountain water—naturally filtered over a decade—to make Sawanoi Ginjirushi Junmai, a sake that beautifully balances tradition and precision.
Made with rice polished to 80%, this Junmai is full-bodied, smooth, with a clean, rice-forward profile and a crisp finish. Its moderate alcohol content (14-16%) and balanced SMV of +1 make it an excellent pairing for grilled fish, tempura, and rich umami dishes.
